Indonesian Style Beef/Lamb Sates

INDONESIAN STYLE BEEF/LAMB SATES 

 

This is a quick and easy grilling recipe. ‘Sates’ are sold in roadside stalls all over the region from Malaysia and Singapore to Indonesia. Chicken, beef and lamb are the most popular meats. The Indonesian version here is sweeter, more fragrant and less spicy than the Thai or Malaysian version.

If outdoor grilling is not an option, you can make it on the cooktop or oven.

 

Indonesian style Beef/Lamb Sate

 

Ingredients:

 

For the Sate: 

 

1 lb ground meat (beef or lamb)

2 tbsp chopped cilantro

1 minced red or white onion

1 minced garlic clove

4 tsp ground coriander 

1 tsp kosher salt

1 chopped green chili (seeded for less spicy)

 

For the glaze:

 

2/3 rd cup Sweet soy sauce

1 tsp ground coriander

 

Method:

 

Blend all the ‘sate’ ingredients in a food processor and refrigerate until ready to cook.

For the glaze, add the ground coriander to the sweet soy sauce and mix.

Shape the meat into 3” x 1” sates over flat skewers or a popsicle stick.

Oil and heat a grate over the grill.

Grill on medium high for 2 minutes per side.

Apply glaze and cook another 1-2 minutes per side until browned.

Serve warm with rice or salad.
