Easy Pappardelle with Curried Chicken

PAPPARDELLE WITH CURRIED CHICKEN

 

I came up with this recipe, combining my favorite pasta (Pappardelle) with a healthy Asian style curried chicken. It turned out well. Try it out in your own kitchen for an easy, healthy and tasty weeknight dinner.

 

 

Ingredients:

 

1 packet Pappardelle pasta

1 lb ground chicken

1 chopped medium red or white onion

1 tsp shredded/chopped ginger

1 tsp chopped garlic

2 tbsp tomato paste

1 tbsp curry powder

1 tsp smoked paprika

1 tsp salt + more to taste

1 tsp sugar

1 tbsp olive or vegetable oil

A few sprigs of cilantro for garnish

 

Method:

 

Cook pasta as per package instructions, until al dente.

(You don’t want overcooked pasta).

Reserve 1 cup pasta water.

Place the drained pasta in a large saucepan.

Add a few drops of oil to the drained pasta to prevent sticking.

Heat the oil in a large frying pan over medium heat.

Add the chopped onions, ½ tsp salt and 1 tsp sugar and fry for 3-4 minutes.

Add the ginger and garlic and fry for another 3-4 minutes.

Add tomato paste and fry for 2-3 minutes.

Add curry powder and paprika and fry for 1 minute.

Now add the ground chicken and some more salt (½ to 1 tsp) and fry for 2-3 minutes..

Add 1 cup pasta water and let cook until the water is absorbed and the chicken is cooked – about 6-8 minutes.

Add half the cooked chicken over the pasta and mix well.

Serve pasta in a bowl and top with a little more of the cooked chicken.

Garnish with cilantro.
