Kumquat Preserve

Ingredients

  • 2 lbs kumquats
  • ½ cup sugar
  • 2 cups honey
  • 3 cups water
  • 1 stick cinnamon

Instructions

  1. Wash kumquats in cold water.
  2. Cut each in half and remove seeds.
  3. Heat 3 cups of water in a saucepan. Add the sugar and honey and bring to a boil.
  4. Add kumquats and simmer on low heat for 25-30 minutes.
  5. Skim off any foam on top.
  6. Add a stick on cinnamon.
  7. Transfer to sterilized bottles.
