Easy Chicken Tikka Masala

Ingredients

  • 2 lbs skinless boneless chicken thigh or breast - cut into 1” pieces
  • 2 cups plain Greek yogurt
  • 2 tsp ginger paste
  • 2 tsp garlic paste
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp ground cardamom
  • 1 tsp cayenne pepper
  • 1 tsp turmeric powder
  • 2 tbsp vegetable oil
  • ¼ cup blanched almonds
  • 1 large onion - finely chopped
  • 1 tsp garam masala
  • 1 can tomato puree
  • 1 tsp sugar
  • 1 tbsp cream optional
  • 1- 2 tsp kosher salt
  • 1 tsp ground pepper

Instructions

  1. Put the chicken in a bowl. Add 1 cup yogurt, 1 tsp ginger and garlic paste, cumin, coriander, cayenne, cardamom, turmeric, salt and pepper and mix well. Cover and refrigerate overnight.
  2. Heat the broiler to high. Place the chicken pieces in a single layer on a baking tray. Broil for 12- 14 minutes until well cooked and browned in spots. You may need to turn the pieces half-way through.
  3. Grind the almonds to a fine powder.
  4. Heat oil in a large dutch oven. Add onions, remaining ginger and garlic and cook, stirring often till well done - 8-10 minutes. Add garam masala, cayenne and turmeric and cook for 1-2 minutes. Add the tomato puree and sugar, add salt and pepper, stir and cook covered on low to medium heat till thickened and cooked - about 20 minutes. Add the remaining yogurt and cream (if using) and mix well at low heat. Add the powdered almonds and mix well. Cover and cook for 5-6 minutes. Add the chicken, mix well, cover and cook over low heat for about 10 minutes.
  5. Serve warm with naan or rice.
