Ingredients
- 2 lbs skinless boneless chicken thigh or breast - cut into 1” pieces
- 2 cups plain Greek yogurt
- 2 tsp ginger paste
- 2 tsp garlic paste
- 1 tsp ground coriander
- 1 tsp ground cumin
- ½ tsp ground cardamom
- 1 tsp cayenne pepper
- 1 tsp turmeric powder
- 2 tbsp vegetable oil
- ¼ cup blanched almonds
- 1 large onion - finely chopped
- 1 tsp garam masala
- 1 can tomato puree
- 1 tsp sugar
- 1 tbsp cream optional
- 1- 2 tsp kosher salt
- 1 tsp ground pepper
Instructions

Put the chicken in a bowl. Add 1 cup yogurt, 1 tsp ginger and garlic paste, cumin, coriander, cayenne, cardamom, turmeric, salt and pepper and mix well. Cover and refrigerate overnight.

Heat the broiler to high. Place the chicken pieces in a single layer on a baking tray. Broil for 12- 14 minutes until well cooked and browned in spots. You may need to turn the pieces half-way through.

Grind the almonds to a fine powder.

Heat oil in a large dutch oven. Add onions, remaining ginger and garlic and cook, stirring often till well done - 8-10 minutes. Add garam masala, cayenne and turmeric and cook for 1-2 minutes. Add the tomato puree and sugar, add salt and pepper, stir and cook covered on low to medium heat till thickened and cooked - about 20 minutes. Add the remaining yogurt and cream (if using) and mix well at low heat. Add the powdered almonds and mix well. Cover and cook for 5-6 minutes. Add the chicken, mix well, cover and cook over low heat for about 10 minutes.
