Slow Cooker Spicy Meat Curry

SLOW COOKER SPICY MEAT CURRY

A very tasty and healthy slow cooker version of a spicy Indian style meat curry. Traditionally this would be cooked with goat meat, but boneless beef, lamb or pork works well here. You can turn down the spice level to your taste. The prolonged marination and the slow cooking, makes the meat just melt in your mouth yummy.

Ingredients

2 lb. meat (beef, lamb or pork) cut into 1” pieces

  • 1 large red onion ground to a fine paste
  • 1 medium red onion thinly sliced
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • 1 cup Greek-style plain yogurt
  • 1 tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tsp kosher salt
  • 3-4 green chillies slit lengthwise
  • 1 tbsp mustard oil can substitute vegetable oil
  • 2 tbsp vegetable oil
  • 3-4 dried red chillies
  • 1 bay leaf
  • 2 to matoes finely chopped
  • 1 tsp sugar

Instructions

Marinate: In a large bowl add the onion, ginger and garlic paste to the yogurt. Add the cumin, coriander, garam masala, turmeric, chilli powder, green chillies, mustard oil and salt and mix well. Add the meat pieces and toss to mix well till coated on all sides. Refrigerate and marinate for 3-4 hours to up to 8-10 hours.

Heat oil in a large skillet. Temper the oil with the bayleaf and dried chillies. Add sliced onions and cook over medium heat. Add the sugar (this helps caramelize the onions) and keep frying till light brown. Add the tomatoes and fry for a few minutes till the raw smell goes away. Now add the marinated meat (make sure to take it out of the refrigerator at least 30 minutes before starting to cook). Brown on medium high heat for 7-8 minutes.

Transfer to the slow cooker and cook on high for 2-3 hours.

  1. Optional: You can add 1 tbsp of ghee or butter or cream on top.

    Top with fresh cilantro.

  2. Serve warm with rice or naan.
