GRILLED JALAPENO CHICKEN BURGER

Spring is finally here and what better way to welcome spring than to grill. This weekend I made spicy chicken burgers, which turned out really well. Here is the recipe below. Enjoy with your favorite brew. These burgers are healthy, spicy and super-tasty, as well as quick and easy to cook.

Ingredients

  • 1 lb. ground chicken breast
  • 1 Jalapeno pepper thinly sliced (seeded, if you want less spicy)
  • 1 bunch cilantro chopped (1 cup)
  • 1 medium shallot finely chopped
  • 1 tbsp Berbere Spice mix you can substitute spice mix of your choice
  • 1 egg
  • 1 tsp kosher salt
  • ½ cup breadcrumbs plus more to coat
  • ½ tsp pepper
  • 1 tbsp olive oil
  • 2 tbsp light mayonnaise
  • 1 tsp chilli sauce
  • 1 red onion sliced
  • 4 - 5 thick slices sharp Cheddar cheese
  • 4-5 Brioche Buns

Instructions

  1. In a large bowl, mix the chicken with the sliced jalapeno, cilantro, shallot, spice mix, egg, salt and breadcrumbs. Mix well with your hands.
  2. Using wet hands, form 4-5 large flat patties, each 4-6 “ diameter.
  3. Place breadcrumbs on a plate, and roll the patties in the crumbs to coat well on all sides.
  4. Slice the onions to form large rounds. Sprinkle with salt and pepper.
  5. Slice the buns.
  6. Mix the mayonnaise and chilli sauce to make a spicy aioli.
  7. Heat a well oiled pan on the grill till medium hot (400*F).
  8. Alternatively you could cook on a heavy bottom frying pan over medium heat with 1 tbsp of olive oil.
  9. Place the patties and onion slices in a single layer, cover and let cook for 5-6 minutes.
  10. Remove the onions, which should have been cooked by now.
  11. Flip the patties and cook for 5-6 minutes on the other side, till well browned and cooked through.
  12. Add the buns to the pan, inside down.
  13. Add the cheese slices on top of the patties till they begin to melt.
  14. Assemble the burger:
  15. With a butter knife, add a layer of aioli to the bottom half of the bun.
  16. Place the patty on top, then the onion and then the top half.
  17. You could add tomato slices, lettuce and/or bacon as desired.

Recipe Notes

Note: You can substitute the Berbere Spice with any spice mix of your choice e.g. Curry Powder. You can substitute the Brioche for any bun of your choice. Alternatively you could cook on a heavy bottom frying pan over medium heat with 1 tbsp of olive oil.
