Easy Bread Pudding anyone can make
EASY BREAD PUDDING
I usually avoid desserts and therefore don’t make them, but in recent times I have been having sweet cravings. We had invited a few friends over and I chose to make the dessert and opted for this easy bread pudding, which I had made once before. It’s super easy and quick, but the taste is awesome. Try it.
Here is the recipe:
Ingredients:
For the pudding:
1 lb white bread (preferably stale)
8 large eggs
1 ½ cup whipping cream
2 ½ cup cold whole milk
1 ¼ cup white sugar
½ tsp cinnamon powder
For the sauce:
1 cup Gingerbread liquor (or any liquor of your choice – Bailey’s would work well)
2 tsp cornstarch
Method:
Grease a baking pan 12” x 8” x 2 “, with a stick of butter.
Remove the crust from the bread slices and roughly tear into 1” pieces
Place the bread pieces in a layer at the bottom of the baking dish
In a large bowl, crack the eggs and whisk
Add the whipping cream, milk, sugar and cinnamon and whisk until well blended
Pour this mix over the bread and push on the bread with a spatula to make sure that they are completely submerged
Let soak for 30 minutes at room temperature or for 2 hours in the oven
Heat the oven to 350*F and bake the pudding in the center rack until it puffs up and the center is set (about 45 minutes)
While the pudding is baking, add the liquor to a saucepan over medium heat and add the cornstarch. Stir well until it thickens (2-3 minutes).
Serve the pudding warm or cold with the sauce poured over the top.
