Easy Fluffy French Omelette

Ingredients

  • 2 eggs large
  • 1 tbsp fresh herbs thyme, oregano, chives
  • 1/4 tsp kosher salt
  • 1/4 tsp fresh ground pepper
  • 1 tbsp unsalted butter
  • 2 tbsp shredded cheese mozzarella or other

Instructions

  1. Use a pair of chopsticks to transform this dish.

    Crack eggs into a bowl.

    Add herbs, salt and pepper.

    Use a pair of chopsticks to beat the eggs in a circular motion until well blended.

    Heat butter in a frying pain, swirl and heat on medium till foaming but not browned.

    Add eggs, swirl pan to spread, then using the chopsticks, stir vigorously in a circular motion till a soft scramble forms.

    Add shredded cheese.

    Pick up the edge with a flat spatula and roll.
