Aji de Gamba (Garlic Shrimp) Spanish style

Ingredients
- 1 lb large shrimp shelled and devined
- 1/4 cup olive oil extra virgin
- 6 cloves garlic thinly sliced
- 1 whole dried chili
- 1 tbsp brandy
- 1 tsp cilantro chopped
- 1 tsp kosher salt
Instructions

Heat the olive oil in a non-stick frying pan over medium high.
Add the garlic slices and cook over moderate heat until golden (2 minutes).
Add the chili and stir.
Add the shrimp in a single layer and cook until shrimp is pink on one side (about 2 minutes), then flip using a pair of tongs and cook the other side till cooked through (2 minutes).
Add the brandy, then sprinkle the salt.
Cook till the shrimp are white and pink throughout (1-2 minutes longer).
Serve warm, topped with cilantro.
