MUSHROOM AND CHEESE FLATBREAD PIZZA RECIPE
Make this easy, tasty and healthy flatbread pizza in minutes at home. The recipe makes gourmet thin crust pizzas. You can use store bought flatbread or make your own dough (check my earlier recipe). You can add more vegetables, cheeses and herbs of your choice. This recipe makes 2 flatbreads, enough for dinner for two.

Ingredients
- ½ lb mushrooms thinly sliced mix of various mushrooms
- 1 shallot minced
- 1 garlic clove minced
- ¼ cup olive oil extra virgin
- ¼ cup dry white wine
- 1 jalapeno pepper thinly sliced
- Kosher salt
- Fresh ground pepper
- ½ cup crumbled Feta cheese
- ½ cup crumbled goat cheese
- 2 tbsp chives chopped
- 2 tbsp tarragon chopped
- 2 tbsp parsley chopped

Instructions

In a skillet heat the olive oil over medium high.

Add the mushrooms and cook till browned 5-6 minutes.

Add the shallots and garlic and cook for 1-2 minutes.

Add the wine and cook till evaporated (1-2 minutes).

Season with salt and pepper.

(as the Feta and Goat cheeses are salty, use less salt)

Turn oven to medium high - 350*F.

Drizzle the flatbread with a few drops of olive oil.

Add the crumbled cheese and the mushroom mix.

Top with the fresh herbs.

Heat in oven for 2-3 minutes.

Serve warm.
