Sichuan style Spicy Grilled Lamb Skewers with Cumin

SICHUAN STYLE GRILLED LAMB SKEWERS WITH CUMIN
Spicy lamb skewers, which are full of flavor, come together quickly in this dish made for grilling in spring or summer. Serve with fried rice for a complete meal, or as an appetizer.
Ingredients:
1 lb lamb, cut into ½” cubes
½ onion cut into thick ½” slices
For the marinade:
2 tbsp peanut oil
2 tbsp soy sauce
2 tsp cornstarch
2 tsp cumin powder
½ tsp chili powder
½ tsp kosher salt
½ tsp Sichuan peppercorn – roughly crushed
½ tsp ginger paste
½ tsp garlic paste
1 tsp vinegar
1 tsp Sake or rice wine
½ tsp ground black pepper
Method:
Soak bamboo skewers in water for 30 minus.
If you want a smoky flavor, soak wood chips in water and add to a smoker box or smoker on your grill.
Add the marinade ingredients together and pour over lamb and onions.
Mix together well.
Thread lamb and onion on to the skewers alternately.
Light up the grill to high.
Place the skewers on the hot grill, close the top and grill 5 minutes per side, until well done.
You can sprinkle extra cumin powder on the grilled lamb for added flavor.
