Tomato Salad with Pine Nuts and Molasses

TOMATO SALAD WITH PINE NUTS & MOLASSES

 

A great way to kick off a meal in the warm weather. I adapted this

from a recipe in ‘Bon Appetit’. We enjoyed it with a glass of chilled white wine (Viognier) and followed it with a grilled chicken main course. Feel free to improvise if you don’t have some of the ingredients. 

 

Ingredients:

 

1 lb cherry tomatoes, halved

⅓ rd cup golden raisins

¼ cup Apple Cider vinegar

¼ cup pine nuts

½ small red onion, thinly sliced

¼ cup extra virgin olive oil

1 cup fresh basil leaves

1 tsp kosher salt or to taste

2 tbsp molasses

 

Method:

 

Place the raisins in a bowl, add the vinegar and let soak for 20 minutes.

Drain the raisins and set aside.

Heat an oven to 350*F.

Toast the pine nuts for 6-7 minutes, turning once, until lightly browned.

Place the tomatoes in a large bowl, add the onions, toasted pine nuts, raisins, olive oil and salt and toss.

Add the basil leaves and toss again.

Place the salad on a plate and drizzle lightly with the molasses before serving.
