Quick and Easy Mint/Cilantro Chutney

QUICK AND EASY MINT/CILANTRO CHUTNEY

 

Here’s a quick and easy way to make a spicy, tangy chutney which will last days in the refrigerator and months in the freezer and can be used as a dipping sauce, condiment or as a sandwich or burger spread. Use it with our grilled Paneer/Tofu tikka recipe.

 

Ingredients:

 

1 cup fresh mint leaves (stems and all)

2 cups fresh cilantro (stems and all)

1 tsp garlic, chopped or paste or grated

1 green chilli, chopped (seeded for less spicy)

1 tsp kosher salt

2 tsp sugar

2 tbsp lemon juice (about 1 lemon)

1 tsp cumin powder or toasted cumin seeds

1 tsp roasted peanuts (if salted, use less salt above)

Water, a few tbsp as needed

 

Method:

 

Add all of the above in a blender and blend on high until a smooth paste is formed. Add water 1 tbsp at a time as needed. It should be mildly thick but not thin and runny.

 

Note: Works very well as a sandwich spread or for spicy burgers.Mint/Cilantro Chutney
